First, you will need the following ingredients:
- 4 ears of corn
- 1 tablespoon of vegetable oil
- Salt and fresh ground pepper
- 4 scallions, thinly sliced with the ends removed
- 1 red bell pepper, seeded and finely diced
- 2 tablespoons of minced chipotle peppers in adobo sauce (can be found in salsa departments at many grocers, if not you may substitute with 3-4 green jalapenos)
- 2 tablespoons of sugar
- 1/4 cup cider vinegar
To remove the corn from the cobs, first coat them lightly with vegetable oil, salt, and pepper. Then grill the cobs over a small fire, until slightly charred. Make sure to rotate the cobs so that they cook evenly. Allow the cobs to cool off, then slice the kernels off with a knife. Now you may mix the corn with the rest of the ingredients.

Recipe: Tay's Hot and Spicy Salsa
This is a simple salsa recipe provided by FoodNetwork.com:
Firstly, gather the following ingredients:
- 2 fresh jalapenos
- 1 bunch of fresh cilantro leaves
- 1 clove of garlic
- 1 banana pepper
- the juice from 1 lime
Also, create a seasoning by mixing:
- 1 cup of salt
- 1/4 cup of black pepper
- 1/4 cup of garlic powder
Now, add one teaspoon of this seasoning to the rest of the ingredients and mix them all in a food processor. Lastly, take one can of diced tomatoes and add them to the mixture (you may want to dice the tomatoes into smaller pieces beforehand).
This recipe serves 8, and is quick and easy to make. It can be very spicy, but you can reduce its heat by removing the seeds and veins of the jalapeno.

Review: Pace's Pineapple Mango Chipotle Salsa
In 1947, David Pace, founder of Pace Foods, created Pace's original salsa variety, known as Picante Sauce. It wasn't until 1981 that they introduced the Mild and Hot varieties of this salsa, and in 1989 a thick and chunky version was released.
Finally, in 2008, Pace released a line of five new salsas, including this sweet sauce which incorporates fruit to add a unique taste. Pace's Pineapple Mango Chipotle Salsa contains all the usual parts of salsa, such as tomatoes, jalapenos, and onions, but adds a variety of ingredients which elicit a sweet and smoky flavor.
Unfortunately, the salsa is only available in the medium variety, which may leave a bit to be desired among those who enjoy spicier products. But it makes up for its lacking spice level with its great taste and nice, smooth consistency.
