Recipe: Corn and Chipotle Salsa

Here's a recipe provided by Pepperfool.com:

First, you will need the following ingredients:

- 4 ears of corn
- 1 tablespoon of vegetable oil
- Salt and fresh ground pepper
- 4 scallions, thinly sliced with the ends removed
- 1 red bell pepper, seeded and finely diced
- 2 tablespoons of minced chipotle peppers in adobo sauce (can be found in salsa departments at many grocers, if not you may substitute with 3-4 green jalapenos)
- 2 tablespoons of sugar
- 1/4 cup cider vinegar

To remove the corn from the cobs, first coat them lightly with vegetable oil, salt, and pepper.  Then grill the cobs over a small fire, until slightly charred.  Make sure to rotate the cobs so that they cook evenly.  Allow the cobs to cool off, then slice the kernels off with a knife.  Now you may mix the corn with the rest of the ingredients.
